To tell you about the day I made this dinner. I'm too stuffed to do it now. Its a Hinkebein pork chop with apple stuffing; apple sauce; roasted sweet potatoes, beets, and onions; and garlicky green beans. All homemade and very local. This is the reason why we don't eat meat for a few days of the week. We save so we can splurge on gorgeous cuts like this 2 inch thick cut pork chop. It's like the porterhouse of pork. A little tenderloin and a little loin. I'll fill you in on the details tomorrow.

ReplyDeleteI got that piece of meat from a guy who looks like he should be raising things that people eat. Big stocky guy who drives a big truck and wears a big belt buckle. I'm going to write an entry about his meat one of these days. When I asked his wife where he was this weekend (at Tower Grove FM) she said "he's at his last bbq competition of the year." Perfect!
